This is the most traditional Chinese restaurant, of particularly Beijing style. As soon as you enter the restaurant, the welcoming waiter will be shouting to their fellows to have your table assigned, then the next waiter will be shouting to lead you to the table. All menus are hung on the wall. While you are rubbernecking and ordering, one of the waiter will be shouting your oder to the chef, and when the chef has the dish ready, he will be shouting back to have it delivered to you at the first time. During the meal, when you need tea, you are supposed to be shouting " Xiao Er, Shang Cha " ( My Fellow waiter, Tea please ). For most Chinese restaurants, the noisier it is, the more authentic it is.
